I like the cheese on the dough first too.

Also agree with someone a couple of days back about an art getting the crust thin and crusty. You wouldn't think it's such a difficult thing to do .. but ultimately, when I do try .. the pizza usually comes out thicker than I'd wanted.

When I come to NY for some of that NY-style folding pizza, lol, also want to check out some of those great little Italian deli's we always hear about.

Stone-ground-the amazing smells of a NY Italian deli. Also when you get to NYC don't forget to check out the Jewish deli's!!!!

My FAVORITE Sicilian pizza is from L&B Pizza/Spumoni Gardens in Brooklyn. Heavenly! How I miss it!

I just read a blurb in the paper about a Polish deli on First Ave at E 7th St. I'm guessing it'll be worth the trip just to walk in and breathe deeply

Because pizza is yeast risen, even a pizza that's rolled thin will turn out to be not thin once it's baked, so it's pretty delicate getting it as thin as possible before it goes in the oven without tearing it, and also making sure the oven is quite hot. I do a combination of rolling and tossing. On some experiments I've prebaked the crust for a few minutes first, and if the center has puffed out I punch it back down before applying cheese and sauce.

It was round, but only about 9 inches diameter, so they brought the whole thing out on my plate. I don't know why that one place sticks in my mind, but I remember it was on Mulberry Street near Chinatown.

Now this is what I'm talking about!

I can taste it and smell those heavenly smells from here!

I'm not a hot dog eater, but doesn't matter. If and when I come to NY, I'm going to one of those little Jewish delis and having one of those kosher dogs with the steamed bun and cabbage!

Then I'm going to run from one pizza place to the other!
