Tonight we are having a bunch of people over to eat before we head out to a concert. We are slow cooking bbq chicken thighs until the meat falls off the bone, homemade coleslaw, jalapeno cornbread, a crab and cream cheese spread with crackers for an app, and peanut m&m's cookies for dessert!
By the way ... just normally two of us here.... and we ALWAYS end up cooking for at least 4 too!!
Found this on a jar of Ragu, and it is good (easy to play with the recipe, too). It's also a healthier twist on parmiagiana-anything, chicken or eggplant.
The original recipe calls for (4) large chicken breasts.
One egg
Italian bread crumbs
Jar of spaghetti sauce
mozarrella cheese (I use slices -- two, cut into triangles for the 4 breasts)
grated parmiagian cheese (fresh is the best)
spaghetti noodles
Preheat the oven to 375. Dip the chicken breasts in egg, batter in the bread crumbs, and place in a casserole dish. Bake for 20 minutes.
Pour jar of spaghetti sauce over the breasts, just covering them. Layer cheeses, starting with the slice of mozarrella, finishing with the parmiagian. Bake for another 20 minutes. Chicken breasts should reach an internal temp of 165. I add this only because some breasts are smaller/larger than others and you need to allow for cooking times.
While casserole is cooking, prepare the pasta. When it comes out of the oven, you are ready to eat. I serve this with a simple green salad, or a Caprese salad (depending upon how much cheese I actually put in the casserole already), and bread. Goes well with a red wine. Kids like it, too.
I have varied this so many ways -- adding nice fresh herbs, or fresh mushrooms, trying different pastas like penne or spinach or wheat spaghetti. I even make a vegetarian, eggplant parmiagiana when I am preparing this for a crowd. Both are equally good.
It stores well and re-heats easily. And people think you slaved-away over a hot stove.

Okay, I am going to try this new recipe with the chicken and spaghetti. I just ran to the store to pick up a couple of things I needed and will be starting it soon. Will let ya'll know how it turns out.

me, too, my family thinks its strange. When I was a child, we had breakfast for dinner once week!
