You go Nic-that sounds good. Other really easy weekday meals-buy good quality roast beef or turkey at your deli counter. Get some jarred gravy. Make hot roast beef or turkey sandwiches and some fries and you're set

Did you find the meatloaf recipe? I scanned back to the 30's-maybe i missed it-I also checked the recipe forum. Here's what I do-2 lbs ground beef, a good 1/4c ketchup (I don't measure-just eyeball), couple tablespoons mustard,horseradish-if you want, worstershire sauce-a few shakes, garlic powder, salt/pepper, packet Lipton's onion soup, 2 eggs-mix well. You can add breadcrumbs or oatmeal-mix in-shape into loaf, score top lightly and pour a little beef broth over. Bake 350 for 1 hr.

Tonight I'm finally cooking that corned beef-so will do cabbage, smashed potatoes and horseradish mustard.

Thanks everyone - I'm sure I'll come across that cubed steak at one point or another.

Ok - so what is swiss steak and how do you make that? (I know you guys are laughing at me LOL)

Lacey - I found the recipe to Olive Gardens alfredo sauce - yummm I can't wait! I have their recipe for Pasta Fagioli too but I don't have enough time for that - can't wait to make that though....hmmm with some breadsticks...yummmmmmm

And thanks for the meatloaf recipe too!

I really wanted to try to lose some weight and get a little healthier (that is the whole point of me cooking) but goodness gracious these recipes sound soooo good I can't resist!

Alfredo is so easy and so good-what could be bad with butter, cream and parm cheese! LOL. And pasta fagioli-oh I'm drooling. I love Olive Garden for lunch just their salad and pasta fagioli.

Oh Nic-with the meatloaf and your busy lifestyle-you may want to increase it that way you'll have leftovers-hot meatloaf sandwiches.

Swiss Steak was one of my favorites back when they served it in the school cafeteria! It is real comfort food.

I don't have a real recipe....but

1. take some cube steaks about a pound and dredge them real well in seasoned flour, really work it into the meat. set aside

2. saute up some green pepper and lots of onions in a big ol' fry pan, (electric would be good because you are going to end up letting the whole thing simmer) I like to use tried out salt pork or bacon for the frying because it adds flavor. Dont be stingy with the pepper and onion, either a real big one or two. set aside

3. brown the steaks in the fry pan--both sides!

4. spoon the sauted peppers and onions on top of the steaks

5. mix a can of tomato sauce (8 oz) and a cup of water and a dash of worcestershire sauce and any seasoning tht sounds good like a little lowry's season salt and pepper!

6 pour the tomato mixture over the meat and veggies and simmer on low low for awhile....a good while....maybe an hour or more....until the meat is fork tender.

7. mind you watch it so it doesnt dry up and scortch, add more water as you need to. The final product should be very tender and all the flour from the meat should thicken the red gravy. Serve with mashed potatoes and I bet you will be using that saucy gravy to mix with a little potato on your plate. Enjoy! Now don't dare skimp on the onion....its so good.

Peas would be a good side vegtable, the color and the taste would go real good.

on the swiss steak....probably should cover it for some of the time it is "braising" in the pan
