Looks like we are thinking on the same track lacey...I'm about to take chicken thighs too. Not to sure how I'll prepare them but since I have several frozen I need to use them up! I'm sure hubby will want the usual mashed potatoes and probably fresh brussel sprouts and fresh sliced tomatoes.

I have a seven bone roast in the crockpot while I am at work. I am still trying to figure out what veggie to have with it...

I feel the need for fish - I have family staying and we are all going shopping at Central Market - think I'll make those Lettuce Parcels but maybe with sea bass or grouper and some Thai herb stuffing...

The Bailey's Irish Cream cake turned out fabulous yesterday and was very easy since most of it is from a mix and not scratch. I may not want dinner tonight after I pick at it during the day today.

from cookadvice.com:

1 pkg yellow cake mix
4 oz. instant chocolate pudding mix
3/4 c. oil
1/8 c. water
1/4 c. vodka
3/8 c. Bailey's Irish Cream
4 eggs

Combine all in a bowl. Beat until smooth. Pour into greased & floured 10" bundt pan. Bake at 350 deg. 40-50 min. or until done. Remove from pan and cool completely. Mix a glaze of Bailey's and powdered sugar to a thick consistency and drizzle over cake. Yummmmmmm!!!

Seriously, tonight will be leftover flank steak teryiaki for DH and I have jumbo sea scallops to broil for me tonight. Sides of rice pilaf and fresh broccoli. (I get the better deal here, but DH doesn't care for scallops.)

HighlandsGal: Yeah!! Knew you'd knock 'em dead! Congratulations

Hubby just said we're going out-oh well those things I always go along with!

Sea bass and grouper are some of my favorites.

Heading to Costco after work, so probably one of their convenience foods.

Any recommendations?

I am such a lousy baker and I had to find some way to make a cake. It doesn't get much easier than this and it turned out sooooooo good.

I'm thinking about having a fall day in August. If I stay inside in the AC and pretend it's fall a big pot of chili will hit the spot. Late November is just to long to wait for chili over a bed of rice. Mine will be topped with jalapenos and a dab of grated cheese. Now there is one little obstacle that may foil my scheme here. My wife will be traveling all over the county getting in and out of the AC. Not sure how she will take to my idea here?
