One more change. Instead of the salad the cucumber and onion marinated in malt vinegar and the tomato wedged and the avocado quartered and lightly sprinkled with white pepper and a thin coating of olive oil mayo. Sometimes to get it right I just have to wait for the ole brain to pass a little gas.

Had dinner for lunch today. Got a boneless leg of lamb and marinated it overnight in greek yogurt, shwarma spices and olive oil, roasted it today in the oven and served with okra, and mashed cannelini beans. Leftover peach sponge cake with whipped cream for dessert. Tonight's supper will just be a tossed green salad with an olive oil & lemon dressing.
Lemon Seafood Scampi. I picked up some gourmet lemon pepper linguini that I've been wanting to use. We found a good deal on lobster tails yesterday so thinking the linguini with the lobster, shrimp, clams and maybe some rock cod we still have from the last fishing trip. And lots of grated lemon zest...
Grilling out tonight. Barbecued baby back ribs, corn on the cob, cole slaw, baked beans and Texas toast. Sweet iced tea to drink and strawberry pie with ice cream for dessert.
I have boneless skinless chicken breast tenders marinating in a balsamic/apricot glaze that I will cook in a skillet. Then there is the easy peasy pasta and green beans.
Homemade manicotti, sauce, and meatballs. For my son's 30th birthday!
(and Funfetti cake for dessert--his favorite since he was around 4!)
