Small mixed greens salad with homemade Italian dressing & a small cast-iron pan-seared steak. That cast iron pan has got to be the most used article in the house, besides my toothbrush.

Even though it's early morning here in Las Vegas, I already know what I'm having for lunch. Been thinking about it since I woke up!

I had made a meatloaf the other night and I have about 1/4 of it left over. Went to the store yesterday and got fresh pumpernickel bread. That's a rarity to even find fresh baked pumpernickel in the supermarket bakery here and if they have it, it sells out pretty quick. I was lucky and got the last loaf.

So, today, I am going to toast ever so slightly that delicious, very dark pumpernickel bread and thinly slice a couple of pieces of the leftover meatloaf to put on it, slathered with dill pickle relish and a schmear of sugar free ketchup.

A giant mug of Campbells Tomato Soup {it's convenient} mixed with some 2% milk (cream of tomato soup) and garnish it with fresh cracked black pepper.

I might even have to dunk that sandwich in the soup before each bite.

It don't take much to make my day, lol
