For Stateside regular hotels, I think some Hampton Inns put out a great complimentary breakfast. One that I stayed in (I think Rockhill, SC) had a guy there who was cooking up eggs and meat the way you wanted them. I stayed there for a month one time on business and couldn't wait for breakfast every morning.

There was one hotel that served chocolate croissants - I could eat just cc for breakfast and be content.

We stayed overnight at the Hilton in Austin and I had Migas that was very good. I always avoid buffets whenever possible.

Pancakes, sausage and toasted English muffin with butter or a 3 cheese omelet with bacon and a toasted bagel with butter.

Reading this thread makes me think I need to stay at better hotels. All the hotel breakfast food I've ever had reminded me of the glop served at my university cafeteria. Usually I end up skipping the hotel and grabbing breakfast at a local diner.

Hilton Garden Inn has a great buffet breakfast for about $10. I stayed at one in Cleveland Ohio.

The chicken chilaquilles in salsa verde and the fruit tamales at the former Hyatt in Guatemala City. They also made pretty good omelots.
