I have a piece of roast left over from a few days ago. I think I am going to make old fashion beef hash, but with a modern twist. Mom used to always use the left over roast to make hash. She just cut onions, potatoes and he roast into bite sized pieces and heated it in a big cast iron skillet with left over gravy. I am going to do the same, but using reman noodles instead of potatoes and adding a couple of jalapenos. We will have broccoli and maybe a salad to round off the meal.
I never liked hash because I didn't like the meat/potatoes in the same dish (probably weird). I like your noodle alternative although I would likely skip the jalapenos!
This was last night's dinner ... an avocado burger ... I hadn't had a burger in what felt like a long time (it was probably 2 weeks ago, LOL) and this one was delicious ... I had an avocado that was about to go bad so had to use it up!
LOVE the avocado on it!! I still have a bit of the avocado left in the fridge so I may have to have another avocado burger again tonight ...
(Oh, I had potato chips with the burger ... hadn't added them to the plate yet. )
need to use up some rotisserie chicken - so crispy chicken tacos and regular tacos - and fat free refried beans - sides of cheese, lettuce, tomato, sweet onion, sour cream and avocado. Kids and DH like store crispy shells, - I prefer to fry my own.
1 --- Medium pan pizza: garlic buttery blend, Peruvian cherry peppers, fresh spinach, green peppers, mushrooms, onions, black olives.
2--- Medium Hand Tossed Pizza: garlic buttery blend, mushrooms, pineapple, onions, black olives, diced tomatoes.

Hubby expressed a desire for fish tonight, but it doesn't sound good to me. I think I have some in the freezer...tilapia and grouper, so I'll try and dredge up some enthusiasm.
So I decided on broiled grouper with a butter, parmesan, mayonnaise, and lemon topping. The recipe serves it over rice, so I'll make that and some stir fried zucchini. Put butter, cheese and mayo over anything and I can warm up to it.
Black bean chili (Martha Stewarts recipe) topped with sour cream and chopped green onions.
Cheesy jalapeno corn bread. Butter lettuce, tomato and cucumber salad with a lime cilantro dressing.
Maybe a cold IPA. Or iced tea. The rest of that strawberry chiffon pie I made yesterday.
