That happens to me a lot too. I don't over cook -- I keep checking and as soon as it's done in the center I take it out. But it's often so dry the cat won't even eat it.
When I cook chicken in the crockpot...I have the opposite problem.....it is swimming in liquid...even if I don't add any liquid when I put it in.
We change my earlier commitment to making spaghetti sauce.....I wasn't in the mood for that either.....so now its left over mac and cheese (it was really good) and for DP left over rice....and baked spam.....(he suggested that )...he loves fried or baked spam.
I got my Spring Greens urge a little early. Generally around late February/ early March I get a craving for greens, dandelion in particular. In Pa they have what is called a hot bacon dressing which is put on them around Easter time at church suppers.
No dandelion yet so I used bagged spinach and instead of the hot bacon dressing, I went with a cold dressing. Its Wos Wit Sweet and Sour dressing which is a no fat vinegar and oil dressing with sugar added. I added Hormel bacon crumbles to it and then corn bread croutons.
Another awesome salad ingredient is cold sauerkraut with russian dressing. I'm still looking for rye bread croutons.
