Tonight is our about every other Monday night specialty: Chinese food: I am making chicken fried rice with left over chicken and left over rice. I will sautee boc choy, finish off steaming some snow peas we have with mushrooms and have frozen pot stickers that I got at Sam's a few weeks ago. The package was huge. we will be eating them for 6 months I think.

About those garlic chicken legs...here's a really simple idea. I make my chicken breasts this way.

chicken
packet of winco ranch dip
panko
parm cheese (whatever one u choose)

Dump this stuff ^^ in a large zip lock, throw your chicken in there to coat, and lay on rack.
Bake abt 40-45 mins at 350. Tastes fine. I use the chicken on my salads, or this morn I'm gonna make breakfast
tacos w/some.

A huge tossed salad for me!! I just found out my Jewel carries Olive Garden Italian Dressing! WOOOOOOOTTTTTTTTTT!!!!!!!!! I can't wait!!

Don't know what husband is having. He's being an absolute pill today, so not my problem!

Oh Lord- my vegan, no grain eating step daughter and her 8 year old are here for a visit. She first asked me to remove all corn products from our pantry and fridge cause she is so allergic just having it in the air makes her sick. She travels with all her own food so at least I don't have to fix anything for her. But ever since she made that request I have craved popped corn, grits and cornbread! Really isn't that silly?

Anyhow I have been trying very hard to not have any "dead animals on the plate" when we eat together. Broccoli and cheese soup last night so I guess I'll make mac and cheese with salad tonight. When they leave Wednesday I'm going to the farmer down the street and take a bite out of the side of one of his cows!

Marinated two sets of beef. Beef bulgolgi tonight with lettuce. "Taqueria" tacos for tomorrow night. I put it in quotes as I have no idea how authentic it is, but the marinade tasted crazy good despite all the strange ingredients.
