We had a late lunch today, so we had a small supper of Sloppy Joes and french-fries.

away on business for an overnight, bought some reduced cooked chicken in the afternoon filled me up,,,just having an apple that was in the car and dried mango slices for dinner.



and 3 glasses of water... a good evening for a run and get hydrated!

A half of a cantaloupe, a baked potato and a glass of organic vanilla soy milk.

Creamy polenta with sautéed onions, mushrooms, tomatoes, and spinach topped with a sprinkle of parmesan. The last of the strawberries for dessert.

Vietnamese beef and green bean stir fry with jasmine rice. Requires velveting the meat (flank steak, sliced thin). First time I've made this recipe so I only altered it minimally (added broccoli, added minced shallots with the garlic and ginger). Bit too salty for my taste, but the overall flavor and texture worked. Off to mark up the recipe for future uses.

Had the rest of last night's Lamarca Prosecco, which is one of my favorites.
