Tonight I am making a huge, healthy salad. I am going to throw every raw vegetable I can get my hands on into it. I am going to marinate sliced chicken breast and cook it up. My husband and the kids can place that in their salad if they like but I am not feeling like I want any meat tonight.

Easy peasy Pasta and Peas with Mid's pasta sauce. Local brand and recipe from my Italian-American neighbor. (who told us about Mid's when we first moved here)

Broccoli rabe with garlic, slow cooked in the crock pot.

Gelato for desert.

3 slices of whole wheat bread with an avocado-hard-boiled egg-nonfat-mayonnaise mix and a mug of black tea with a teaspoon of sugar.

I think I'm going to make sausage and rice. Easy and tasty. Just crumble and brown the sausage (I'll use hot Italian sausage, since that's what I have on hand), sautee chopped, onions, celery, carrot and green pepper, and mix with rice. I'd usually make my own, but I think I'll just do a box of Uncle Ben's.

Cooked spinach with Bragg apple cider vinegar, one fried potato, with some HEB Borracho beans (made with Shiner Bock beer). Yum! Oh, and a glass of wine.
