We have so much left over meat I have to decide which to use and what to freeze. I think I am going to have cold roast beef sandwiches, and pasta salad. Today is bridge luncheon day, so I will have a big lunch. Spoiled brat will have to be happy with a can of soup. That is ok with him, he loves soup. In fact he could be a street person and just go from one soup kitchen to another.
Tonight, we are having chicken alfredo with mushrooms and broccoli. I might serve over spaghetti because we are out of fettuccine. If I go to the store anyway, I'll grab a box, but it doesn't seem worth it to make a special trip when we have plenty of pasta here.
Yesterday was leftovers - chicken/garlic/onion/pepper/squash/basil with rigatoni.
The storms hit us early this morning. Meatloaf, mashed potatoes, corn, lots of salad and garden tomatoes. I am out of ground pork so I will try pork sausage with the very lean beef. It is just awful out there and calls for comfort food.
I just put some beef stew on the stove...mushrooms, onion, garlic, celery, thyme from the garden, carrots and potatoes. It is about 100 degree here today, so I don't know why it sounded good. Rolls and butter.
Ciambotta..an Italian veggie soup that we doctored a bit tonight. Usually just a veggie soup but added some skinless chicken thighs. Small cooked shells to add.
It's cool as it can be eaten hot or cold.
