You are young enough to be my child ( I know by the age of your kids) but you sound like my dad. Raised in So CA all I knew as a kid was fresh fish, seafood or fresh water. Dad fished all the time and in the fall he went deer or elk hunting, plus we raised rabbits. I grew up not knowing what it was to buy fish in a market.

That is what I've seen for the most part. And stores do keep a record of averages so they don't often defrost too much in the first place.

We catch our own shrimp around here, so what we do is fill a gallon ziplock with shrimp and then fill completely with water and freeze solid. And then just cook the whole bag, but we eat seafood close to four time a week

This is why I mostly buy seafood from Asian grocers that carry fresh seafood like live pawns. Live shrimp cooked tastes so much more succulent than frozen ones. The texture is completely different. Same goes for lobsters, I hate frozen lobster tails.
