The frozen shrimps bought from the supermarket are all nicely separated one from another. When I put defrozen shrimps in the freezer, they all get frozen together in lumps. Is there something special that the stores did to make them separated? Am asking because sometimes you need to take just a portion from the frozen bunch without having to defreeze all of them.

It's called "individually quick frozen". It's done right on the factory ship, as soon after the catch as possible, not in the store.

What Is IQF? (Definition and Examples)

Also, never thaw and re-freeze frozen foods.

When you defrost frozen seafood, they are moist. Then you are refreezing them together thus getting stuck together. If you are going to freeze something, do it first on a tray in a single layer and once frozen, put them in a freezer bag.

But don't refreeze defrosted items! That's not good for any seafood or meats.

I see, thanks. But what do the stores do at the end of the day, with the unsold defrozen seafood? Don't they refreeze them and then take out the next day?

The stores keep frozen *shrimp* (for this example) frozen at all times
by making sure the bags, the frozen shrimp are in, are not being defrosted.

So for you keep that condition, when you do buy bagged frozen shrimp,
is to buy a *thingy*, cooler or an insulated bag, that will keep frozen items,
you just bought, frozen as long as you can.

Then do not go anywhere else, but home immediately.

Once in the freezer, they will stay frozen and stay separate.
Open the bag, pull out what you need and reseal the bag,
and then back into the freezer.

Your question makes me think that you defrost the whole bag, just to take a few out ??
Or ... , when you come home the shrimp is thawed out ?

Yeah that's what I often did. But answer to my question above? What do stores do with unsold defrozen seafood?

Supposedly they throw them out daily. At least the ethical places do. That's why I never buy defrosted seafood. I only buy frozen. You can ask them to give you the frozen from "out" back. I always do this if it isn't in the case.

Most seafood is frozen on the fishing boat....it's shipped frozen. The stuff in the "fresh" case is usually previously frozen

I do. It all depends on what it is and how it was thawed.

defreezed,,,defrozed ???

try the word.....thaw or thawed (im not a grammar Nazi,,,its an ongoing joke in maine ,,half the population says "un-thaw" instead of thaw

most frozen seafood is bought frozen
and sold frozen...

if they are thawed or defrozed...then they have 2 days to sell them,,,or they have to be cooked
