I made a slew of appetizers for us to munch on all day - some dips/spreads, crackers and chips, a few hot things - we've got a ton of food and folks will be showing up soon for tonight's game - should be fun!

I made Mexican chicken soup in the crockpot today.
Main ingredients:
2 boneless chicken breasts
2 small stalks of celery, chopped
1 carrot, cut in 3 pieces (for flavor - will remove before serving - we hate cooked carrots!)
1/2 onion, chopped
1 can pinto beans, drained and rinsed off
2 small cans Rotel tomatoes & green chiles
Corn (cut off two cobs of leftover grilled corn)
32 oz. chicken stock
Seasonings:
2 tsp dried red and green peppers (Penzey's)
1 tsp Mexican oregano
1tsp chili powder
Salt
Wendy's Copycat Chili with cheese, onions, sour cream and saltines.
