Tonight's dinner is a pot luck "salad and dessert dinner" in our HOA. Now that the snowbirds have flown, we decided to do something with the permanent folks.
A little depressed because I have to take yet another CT scan (I thought I was home free but they want to do a high-resolution scan), I'll just make shrimp quesadillas and cilantro rice, I don't feel like making refried beans. I think I'll have to make a wine run on the way home too.

I was completely unmotivated, I remembered a pouch of Thai Red Curry, back in the pantry, so I made it with shrimp and pea pods, with rice. I thought it was fine, but DH thought it was too spicy for his delicate sensibilities. Win some, lose some.
