Today is clean out the fridge day. Started out marinating chicken breasts with roasted tomatillos, roasted cubanelles and red chiles, tomatoes, garlic, lemon, onion, olive oil, and balsamic vinegar. Heated up leftover rice, lima beans, black beans, and corn bread. Add cucumber salad and sweet potatoes. Watermelon for dessert.

Home made guacamole with tortilla chips.

Home made salsa - not by me - with the same. And, a layered cornbread salad, which makes a beautiful presentation and is suitable for pot luck and covered dish events. Recipe furnished on the recipe page upon request.

Cantaloupe, strawberry and red grapes for desert. Also left over pie, in case anyone cares to indulge.

Unsweetened iced tea.

Ugh! I can't believe I just posted this in the wrong thread!!! Typical!

We went to a family, the husband's, party in Ogunquit, ME today. So our late lunch/early dinner consisted of lobsters, chowder, corn on the cob, macaroni and potato salad too. My MIL made a dip with caramelized onions that was out of this world good!

Pizza tonight. Still have leftovers from our BBQ but was not in the mood to eat them for dinner. For dessert I had a slice of friendly's wattamelon roll, and DH had a piece of Apple pie. I am off the next 2 days Whoot Whoot!

Sounds good. You are so lucky to have an abundance of inexpensive lamb where you are It is crazy expensive here and I'm lucky if I can even find it. Usually only at Easter time.

I made homemade lasagna for my DH. I had chicken salad with dill weed, celery, grapes, some walnuts and a little mayo with a sliced orange on the side.

Still waiting for the recipe. I do love a bit of cornbread, so a cornbread salad just sounds like good nosh.
