I know this sounds odd for this time of year, but I found oxtails on sale so I made a slow cooker oxtail stew with the usual potatoes and vegetables in a wine sauce. We'll have it with garlic toast and a garden salad and the rest of the banana cake for dessert (although my two glasses of Veuve will be my dessert!)
I hope everybody has a wonderful and long holiday weekend. We are supposed to be going to a cookout at my sister and brother-in-law's Edmonds getaway, but we are little annoyed that they asked us to bring extra steaks and ribs! Why not just tell us to bring our own meat then? Oh well, you know what a pain family can be.
Tonight I'm BBQing pork butts on the offset (overnight cook), making coleslaw, and cooking a batch of collards and pintos. This will be served before/during the Clemson game tomorrow.
So we decided to have sushi tonight, we had 2 salmon rolls, 2 tuna rolls,1 cucumber roll, 1 Soft shell crab tempura roll, and one grilled eel roll. I only had 1 salmon and 1 tuna roll and a cucumber roll. DH had the other stuff. It was very good and I would get it again. The place was called Koi Kokoro.
