Wow those stuffed shells sound great!! Is that all homemade?

We're having leftovers-as-burritos. On offer:

Flour tortillas
Seasoned taco beef
Buttered corn with garlic chives
Fritos bean dip (so sue me.. )
Grated cheddar
Chopped tomato and sweet onion
Sour cream
Sliced avocado

Tonight's dinner:

Tortilla Chips with fresh pico de gallo
Mexican beef soup (Corn, green beans, potatoes, carrots squash, and about half a pot roast)
Homemade flour Tortillas
Can of Coke

All for $6.48.

This is why I do not head to many chain restaurants.

The lazy special.

Spaghetti, a white wine topping with tuna, anchovy paste, the rinsed remains of feta and bleu cheese containers, a slice of mild cheddar, a slice of sharp cheddar, sprinkled Parmesan, basil, garlic and Italian spice. The spaghetti served over croutons, then the topping, then mixed in Mexican blend cheese.

Delicious!

TUESDAY: No cooking for me today. I think I over did it yesterday. My back is completely out. I'll be out of commission for at least 2-3 weeks. Ugh. I'm thankful DS lives with me. Time for another ice pack and my meds. I'll have him throw something together. Maybe grilled cheese and tomato soup.

The summer heat flared up again: we have had a pretty good summer, but am ready for fall. I am going to do one more summer meal though: I made a huge spicy chicken pasta salad for dinner. We will have fruit with it and maybe garlic bread.

SO asked for chili con carne. A good way to deal with the garden abundance.
