Thia lettuce wraps stuffed with tofu, shredded carrots, snap peas, green onion, and peanut sauce, grilled corn with jalapeno garlic butter and kohlrabi apple slaw. Not sure what else yet.
Never made this before, but here is the recipe -
Kohlrabi-Apple slaw
1 medium kohlrabi
2 Granny Smith apples, cut into match stick slices
2 medium carrots, peeled and shredded.
1 cup finely diced flat leaf parsley
1 bottle of sesame ginger dressing. ( I use Ken's light)
1/2 cup thin rice noodles
Combine ingredients into a large bowl.
Season with salt and pepper to taste.
toss with dressing and a bit of Cayenne pepper to taste.
Chill.
Enjoy!
ETA - feel free to substitute shredded cabbage for kohlrabi.
