My husband is leaving this afternoon for the week. He is off to Long Island for work. Since it is just me and my boys tonight I am making miso soup. I will double the tofu so it's more filling. I bought some frosted sugar cookies for the kid's dessert.

Happy Sunday!
I like Long Island. I haven't been out there in a very long time. Happy Sunday!

Dinner:

baked chicken thighs, stir fried vegetables, and seasoned rice.

I have such a bad cold that I'll eat whatever I have in the house. I already ate a bowl of cereal this morning, so I guess I'll be making an egg & cheese omelette for dinner. I have a potato, so I'll add that for my vegetable. People eat hash browns for breakfast, so I don't see why a baked potato can't go with an omelette. I've seen recipes for omelettes made with potatoes, but I don't know if I'm that brave.

Just ordered a chicken bacon ranch pie from my favorite pizza place. Going to pick it up shortly. Since DH can't have red sauce we decided to get a whole pie of this. We will enjoy leftovers another night.
