The eggplant parmigiana from last night was pretty tasty.
Tonight is an exploration of spices (the turmeric will be the outlier): chicken thighs seasoned with turmeric, cayenne pepper, cumin, paprika, garlic powder, freshly plucked oregano, salt and black pepper cooked in the Crockpot. During the last 2 hours, I will add some more fresh oregano in addition to fresh onions and green bell pepper. The chicken dish will be served with Jasmine rice, and black beans.
A blueberry nonfat Greek yogurt, 2 large slices of 12 Grain bread with healthy-style margarine & strawberry spread and a large mug of English Breakfast tea with a teaspoon of sugar
Black Bean Burgers with pepper jack cheese, lettuce, tomato and home made onion rings. A beer.
Sounds good. I made a double cheeseburger tonight with pickles, onions, and a tomato, ketchup, mustard and mayonaise. Lol, it was too big. So that I couldn't get my mouth around it. So I broke it down and made two. Lesson learned. For a side, I made saddle fries.
a big salad made with spring greens, grape tomatoes, assorted veggie mix, some dried cranberries, a little cheese and boiled egg. Topped with croutons and poppy seed dressings.
Some of you may remember, or not I was given the challenge of using what was in my freezers (yes plural) for meals. Yesterday, I came upon Italian sausage links. I thawed these, took them out of the casing and browned with onion, garlic, bell paper and celery and seasoning; added diced tomatoes, some sugar(personal perference) a dash of red wine, beef broth and let simmer. Threw in tortellini until al dente
and served with freshly grated Parmesan and Romano cheese. Garlic bread and a simple salad made a great meal.
Still have the ground elk staring at me when I open the freezer. Will report upon domesticating that I to a meal!
