Throwing together some veggie pad thai, with dragonfruit for dessert.
How do you choose a good dragonfruit? The stores around here are finally starting to stock stuff like that and it's too expensive to buy unless I know it's at least ripe.
If weather cooperates chicken on the grill, sweet corn and sliced tomatoes. Fizzy limeade to drink and a fresh peach for dessert. Stay away thunderstorm.
Schemes of mice and me came into play. No grill but sweet corn remains, ham, fresh turnip greens, tomatoes. A little left also of yesterday's acorn squash. Possibly some bacon seasoned pole beans. I'm not throwing my weight around in the kitchen tonight.... so I'll take what I get.

I'm too tired, lazy etc to cook tonight, so we're having a frozen pizza and some Pepperidge Farms coconut cakes. I have an obsession right now with those PF cakes. Maybe after I work my way through every flavor I can quit them.

You want it somewhat soft but still a bit of firmness (like a perfect avocado), and it should be ridiculously pink.
As I'm awaiting my new eyeglasses to come in this week, I'm dealing with my wonky lenses & constant squinting. At first glance, I though you'd written Cocopuffs stuffed salmon... I was going to say that I've known many with a sweet tooth... but, that is certainly the top of the list.
I just joined Costco last Fri & took a quick stroll through without a shopping basket, so could only carry a few things... good thing as I didn't know they also don't offer bags. Tomorrow I'm returning for the giant box of peaches they had, that smelled lovely, but had to leave behind. And, I'll check to see if I need a pkg of 40 ribeye steaks & 100-oz of mustard.
For me, 1/2 ribeye steak & cast iron browned green beans, followed by a double espresso. It wasn't enough, so that was followed by a bowl of organic oatmeal 2-hrs later.
Broccoli pasta salad with roasted red pepper pesto and artichoke hearts. I added crumbled goat cheese this time.
Peach cobbler for desert.
