My husband insisted on kale salad for himself, so I improvised and made myself a grilled flour taco with avocado crema, diced tomato, miniature blackened plantain, pulled salmon, and cilantro, drizzled with lime zest and peri peri sauce.

A papaya for dessert.

This was a winner, definitely making it again.

I enjoyed some stew for dinner: beef, potatoes, carrots, pearl onions and gravy. With 2 small dinner rolls to dip in the excess gravy. Drank Newcastle Brown Ale.

In honor of Pi Day I will be making a couple pizza pies for the family. Nothing fancy, pepperoni on one, mushroom on the other. And by making I really mean assembling a premade crust with other premade ingredients! I just am not that good at pizza from scratch.

I'm thinking about making corned beef and cabbage. I found a great recipe in the WSJ. I have to make my way to the store to pick up the items though.

Something around pork chops. SO is working late. He brought tiny Krispy Kreme pies home yesterday. Not a repeat.

Last night's dinner:

Nasi Lemak, the national dish of Malaysia

This version featured chicken in a sambal sauce and marinated anchovies with a hard boiled egg and sliced cucumbers.
