Kind of an unstuffed cabbage roll casserole. Is it a casserole if you don't bake it? I didn't. Last time I tried to make something like this it was pretty bland. I added lots of garlic and some Cajun spice seasoning this time. It was better. This is one of the rare instances that I think canned, diced tomatoes would be better than the ones I froze last fall. It was almost had too much fresh (sort of) tomato flavor.
I ate at Blaze Pizza at the local mall earlier this evening.
Thin crust chicken pizza with mozzarella cheese, garlic pesto sauce, artichokes, olives and a few other veggies. Pretty good and reasonably priced at $8.95. Drank water.
May have blueberries over vanilla bean ice cream at home for dessert a little later, but am not hungry now.
