i freeze bananas and this works great. I like having a couple dozen frozen at all times.
I always have them on hand then for:
adding to muffins, all flavors, makes them more moist and delicious
my standard breakfast, a frozen banana, instant oatmeal, in a bowl, packed in my bag for work, by the time my morning break rolls around or early lunch, i have delicious oatmeal. the banana thaws, i pour in a little tea or water, and it is yummy. depending on season i may throw in blueberries also. no need to add hot water, the oatmeal works without it.
in hot weather (summers where i live are over 100 for a couple months) a frozen mushed banana as it thaws is delicious, and healthier than ice cream
I would think you would have declined to take most of them, at the point of pickup. But whatever you do with them, I'd advise against going on a banana-eating binge. They contain a large amount of carbohydrates and that's why I quit eating them entirely several years ago. I'd been eating four or five large ones a day and it affected my efforts to keep my weight down and might have caused me some ill health eventually.
I ordered 7 bananas for my curbside pickup and got 7 bunches. What to do? Don't suggest banana bread as no way am I going to do that much baking.
Bananas freeze nicely. Peel them, break them into chunks, put 'em in freezer bags, and there you have frozen nanners to slice for cereal or throw into smoothies, or as a snack in the summer heat.
I discovered by accident you don't even have to prepare them for freezing if you are baking with them. When they are ripe you can just put them in the freezer peel and all. When you need them they slip right out of the peel and can be easily measured by cup.
Now I'm hungry for old-fashioned banana pudding with vanilla wafers. The kind where you make your own pudding. Comfort food!
