Smoked pulled pork, probably serve in tortillas with some veggies, side of zukes, and homemade mac and cheese made with chickpea/lentil noodles (crossing fingers).

Took it old school tonight and made beef stroganoff with some top sirloin I defrosted. It turned out very well -- I used fresh baby bella mushrooms and had it over brown rice with a large side of fresh steamed carrots with butter, parsley and garlic citrus seasoning. Herbal tea and one chocolate covered cherry for dessert.
Easy is good. I had Barber chicken cordon bleu and leftover broccoli, corn, and potatoes.
