Sous vide an eye round roast, will pan sear and make a pan sauce, something with potatoes, and left over roasted cauliflower over herb ricotta whip.

Last night was Vietnamese takeout--heavenly--apps: shrimp tempura, gyoza dumplings, fresh spring rolls each with their own sauce, husband got sushi and we split pho (his next days lunch). :-)

Another early morning, another early dinner. Tonight I tried a recipe for Hunan beef from here: https://momsdish.com/authentic-hunan-beef . Of course I modified it some -- I used a lot more veggies than she lists, and I made 1.5 times the amount of sauce BECAUSE I was using so many veggies (and next time I'll DOUBLE the sauce!) -- and instead of flank steak (which I don't think EVER goes on sale ), I used a boneless New York sirloin steak that had been in my old freezer since 2016. (I actually cooked a couple of tiny pieces first to make sure it was still fine -- and it was! )

Veggies cooking (all fresh except for canned baby corn and canned water chestnuts) ...



After I added the beef, which I'd cut into tiny pieces -- they took literally 2 minutes to brown, then 5 more minutes in the pan with the veggies & sauce and they were DONE ...



And here's the meal on my plate! I had it over 1/2 cup rice and 1/2 cup riced cauliflower -- that's a nice combination ...



It was REALLY good -- I'll definitely use this recipe again! I have 4 more portions to freeze. I am going to run out of room in my freezers!

Chicken Bake (like you can get from Costco cafe), fries, and Mt Dew.

Might have 1/2 Red Velvet cup cake and a scoop of ice cream.

Yes. Pot roast, without liquid on a bed of onions. Sheet pan roasted spuds and carrots. Gravy. Looking good.

Chicken breast stuffed with prosciutto, spinach and Italian blend cheese. I took the rest of the bag of spinach and mixed it with farro, sun dried tomatoes and Parmesan cheese.

Lazy dinner tonight. I cooked up some frozen spicy beef dumplings and some pork and cabbage mini buns I bought at the Asian supermarket. For a lazy dinner it was actually not too shabby!

We had bread soup with dark stale rye bread browned in butter with onions until bread pieces are crispy and added to a homemade vegetable broth. I flavored the broth with salt,black pepper, marjoram and caraway and as garnish some curly parsley. For dessert baked apple with vanilla sauce.
