Tonight potato, zucchini and tomato casserole served with garlic buttered naan.To drink lassi or lemon water.For dessert 1/2 a pink grapefruit.

Tomorrow is the keto version (so I can eat some), almond flour and monk sugar. That's 4 loaves from one obscenely large zuke.

Tonight baked fish, mixed veggies, salad and hush puppies. All washed down with unsweetened iced tea as usual.

Another early morning, another early dinner. I'd gotten a half-air-fried chicken thigh out of the freezer and it was thawed so I went with that plus a Seapak shrimp spring roll plus lots of veggies ...



Added a tiny bit of teriyaki sauce to the veggies when they were almost finished cooking (usually I don't add any sauces or other seasonings to them and they're still delicious, to me at least! ) and added some of the same sauce to the chicken at the table. With the spring roll, I had its own sweet chili sauce -- LOVE that sauce with spring rolls (and with so many other things too)! The dinner was very tasty!

I just finished grinding 4 pounds of chuck roast - it was on sale for $3.97/lb. -so salisbury steak tonight with the requisite mashed potatoes and probably zucchini because it's the oldest veggie in my drawer.

Colussal failure to make my Mexican lasagna like that shown on web sites. However, at least it passed our taste test. That, which was under the top layer. I guess I was mixing 2 or 3 listed recipes. Know I made many mistakes in doing so. Had tried our printer but it wasn't working for me. My husband said he thinks he needs to get some more ink.

Glass of sangria.


Having a couple dried up red licorice. . Contemplating throwing the bag out to trash.


Hopefully next meal measures up.

We've all been there, anxious to taste our work, then frustrated! In times like this a glass of wine always makes me feel better. Cheers!

Tonight we had a Tuscan bean soup with veggies, a tossed salad and a hunk of semolina bread along with a glass of pinot noir.
