DH came home with a bag of frozen artichoke hearts the other day. He was quite pleased with himself, but I already had an unopened bag in the freezer. So I googled recipes for artichoke hearts and came up with one with mushrooms, chickpea, garlic and scallions. That's not the main dish though - I'm doing chicken marsala. I thought about adding some artichokes to the marsala (I've done it before) but decided to leave it as a stand alone side. I've got a few leftovers that are being added to the mix as well. A very eclectic meal for sure.
