With the wintery weather that we will have for the next few days, I decided that this was a good day to make both soup and bread. The menu for tonight (and a few more nights, as a result of leftovers...) is Lentil Soup with Chorizo and Whole Wheat/Buckwheat Bread slathered with butter.

I had a fennel bulb in the fridge that needed attention and I took some boneless chicken thighs out for a Ming Tsai recipe before I realized I didn’t have a key ingredient. Google to the rescue, I found a recipe for chicken thighs and fennel (and potatoes) in the instant pot! I didn’t need the whole bulb so I cut the rest up and will roast it in the oven with some carrots. I hope it turns out - I need some new ideas.

Tomorrow is my 53rd birthday...Yay! We had all kinds of plans. But now we are under a blizzard warning, anywhere from 12 to 30 inches (30-76cm). Luckily I love a good blizzard!

I live in a city that is over 20% foreign born so lots of American fusion here and most of it is incredible!

Magic, can't rep you yet but wanted to say HAPPY BIRTHDAY!! I am a couple of hours north of you and our forecast keeps changing ... earlier today it was no snow tonight, then 1-3" Saturday, then nothing Saturday night -- but NOW it is 1-3" tonight, then 5-8" Saturday, then nothing Saturday night. It's been as bad as 3-5" + 5-8" + 3-5" so I guess I should be OK with what it is now, but it seems like every 15 minutes it changes!

Actually, I usually don't even mind about blizzard conditions (which it sounds like you might get, Magic), as long as we don't lose power. That is my biggest worry.

Anyway, DINNER ... today I made chicken cacciatore in the slow cooker ... used a couple of leg quarters (basically a leg-and-thigh combo), which were HUGE, plus onions and green pepper and mushrooms and tomatoes and tomato sauce plus lots of Italian spices (didn't measure, just dumped a bunch in ... what could go wrong, right? ) ... prep took all of 10 minutes. A few hours later I was upstairs working in my home office and started thinking I WANT DINNER NOW because my house was smelling so great!

Made myself wait until about 4:30 p.m., when I started boiling water for fettucine ... and right around 5 p.m., this was my dinner ...



It was really, really good, and SO EASY (great on a day when I had to get a ton of next week's prep done plus some grading, UGH)! I have a LOT left over so should be all set for this weekend (will maybe even freeze a portion or two for later). Oh, the recipe I used was very loosely based on this one: https://www.pillsbury.com/recipes/sl...0-c03c75d679ac . I did change quite a lot, but still, it was a good starting place as I hadn't made chicken cacciatore in ages.

My forecast changed AGAIN in just the time I was writing this! Now it's 1" of snow overnight + 3-5" Saturday + nothing Saturday night. I WILL TAKE THIS but geez, this is getting confusing!

Karen, that cacciatore looks delicious! My father-in-law (from Milan), would absolutely love it. Maybe I will make the guys some over the weekend.
