Lay the slices out. Either heat up a little or eat cold with a few drops of balsamic vinegar on them. The best way to open up your arteries for optimal blood flow. Which then lowers your blood pressure. To me, they taste great. For all of those that hate the red beets, try the golden beets. Much sweeter. And the sweetest of all is the white beets, where beet sugar comes from.

With your concerns about opening arteries and blood pressure, I'm pretty sure you're not eating sodium added CANNED beets, which is what the OP us stuck with.

I'll be making a German recipe that calls for cooked beets so canned or fresh is fine. You slice and saute with chopped onion in butter, sprinkle with flour, enough to make a sauce, add fresh dill and parsley and beef stock. Simmer till sauce is thickened, then add sour cream. Sounds delicious, doesn't it?

An easier way, again from my German cookbook, is to puree the beets. Chop bacon and fry, then add the pureed beets and a splash of cream. Heat through. Flavor with a bit of horseradish
