Had couple of these, had to make 10 dozens for a small child's birthday.
I like the lemon the best.

Delicata squash pie, a first cousin to sweet potato pie, but I can't grow sweet potatoes in Seattle. It's gonna have ice cream and whipped cream on top.

I had a Sublime ice cream sandwich from Trader Joe's (comes in a pink box that contains four sandwiches). For those not familiar with them, they consist of a thick slab of vanilla ice cream sandwiched between two chocolate chunk cookies. The edge of the ice cream slab is covered in miniature chocolate chips. I could eat a whole box by myself in one sitting!

I need to make a desert for my son's football team. I need to make enough for 65 people. I'm looking for something inexpensive and simple to make. Any suggestions??

"Eton Mess" is delicious and very fresh and both adults and kids usually love it , and if you can keep it chilled should hold very nicely. It is as the name implies supposed to look a bit "rough" too so you don't need to be very prissy about presentation.

Multiply measurements by 11 and it should do fine. You can put it in large salad bowls and use ready made meringues if you are not sure about making them yourself.

If you can get day-old bread cheaply - this is a good one esp. with lots of cinnamon

My vote is for rice pudding....simple to make, cheap ingredients, serve in plastic cups...and get rave reviews.
This is my simple recipe. I have done 4 batches in the same large pot. I think 3 of these pots would serve 65.

Rice Pudding:

1/2 cup rice
1/3 sugar
6 cups milk

Boil ingredients...after mixture comes to a boil, simmer until bubbles form on just the side of the pot. Simmer until the mixture is the consistency of very thick soup, it will continue to thicken a little more while cooling. Add 1 teaspoon vanilla and some cinnamon, stir and then sprinkle more cinnamon on top. If you do make a large pot; do not pour hot mixture into several bowls until the mixture cools. The consistency of the bowls will not be the same.

People rave about this very simple recipe...no eggs...no fuss.
