Christmas Eve we hosted an impromptu wine and cheese party.
Friends in town unexpectedly+roaring fire+cheese board+ some good red and sparkling wine = a very nice time.

Christmas Dinner (thanks to Carlitasway for the inspiration!):

Potato/Corn Chowder (flavored with cumin, topped with cilantro, green onion and sour cream)

Enchilda Casserole (black bean/spinach/chipolte peppers in adobo...yum!)

Salad of bitter greens with blue cheese and cucumber

Home-made pecan sandies with ice cream for dessert.

Served Cava with everything.

Today: too many leftovers!

On Christmas-eve, we had arranged a party in a restaurant Edmond, OK. Had ordered the traditional English Christmas dinner along with great drinks, The restaurants decor there consisted mainly of Christmas tree lights, along with live music, crackers,totally a fun atmosphere.

Previously we would have stuffed shells that were made ahead and frozen... the last few years we had turkey... Being invited elsewhere for Thanksgiving meant no left-overs, so I resorted to the turkey dinner for Christmas.

Well, we are going back Italian!! Waaay to much PIA factor to be bothering with a turkey and all it's clean-up on Christmas!!
