Kelsie, I don't even like lamb, but that sounds good to me!

Not sure what dinner will be. We have a seminar scheduled in Ft. Myers at 3:30, so that kind of cuts down on cooking time. And it's almost cocktail time, too!

Hey room for all-we're not leaving anyone out on this trip. All for one and one for all here.

Just in from shopping and picked up some baby back ribs, liver (yep iron!), organic chicken thighs and breasts. Prepared for whatever Mother Nature brings.

Elston how I miss lamb-not allowed to cook it in this house as Mr. L cannot stand it. But if I see it on a menu when we're out it's mine!

That site was vry helpful ..... I am brining the lamb right now in the fridge with salt and brwn sugar solution as msina suggested....then I will insert garlic slivers in the meat and rub with OO and season with rosemary and pepper...(enough salt from the brining process?) and cook at 325 for 2 hours for my 4 lb piece of lamb. I have red bliss potatoes to roast with it!

Good afternoon!

Just got back from the mall. I am pooped! I tried on so many sandals (like I need another pair!!) The prices of leather flip flops are really costly. Everything I liked was $59 and $69. It's ridiculous. Hey, if I had a job to go to, then I would spend that, but, just for leisure, no way.

Dinner........I need to find something quick and easy for dinner. I was thinking about chicken fajitas, since I have some chicken cutlets and frozen red peppers. I'll more than likely make that.

Kelsie, funny you mentioned lamb. My DH recently asked me when I was making a leg of lamb. I told him not anytime soon....I'm not too keen on lamb.

If I could get by the "smell" of lamb when it is cooking--the wild odor--I might like it. I just can't get by the smell. Probably partially because it isn't something that was served to us as children. I know many people who love lamb so there must be something good about it!

I bought a loaf of Cuban bread and some baked ham and 4 different kinds of cheeses. I think that will work...Not Cuban sandwiches but still good.

Maybe that's why my favorite way to cook leg of lamb is cut into little pieces and shish-kebabbed outside!

There is a local restaurant called Shiska Bob's. I've been meaning to try it.
