I first had sushi in Denver as a 30-something, I am 54 now.
These days it has its place in the ethnic restaurant world just as a Mexican or Chinese place would.
I do think the people who love sushi for *itself* will never leave it. (Just as I will never forsake the cappuccino I first had in the 70's.)
But the trendster-foodies have indeed moved on to other ethnic cuisine: Ethiopian, Cuban food--Latin American food in general.
As for young hipsters, I think it depends what part of the country you're from.
Many young people *grew up* on sushi, as well as Thai.
Going out for sushi is a fun and festive get-together--but take-out works too.
If anything, i associated Sushi with the Yuppie crowd back in the day; now I dont associate it to any crowd as its pretty popular throughout. I've actually cut down on my Sushi, in favor of other types of Japanese cuisine.
I don't think that the popularity of sushi is based on being "in or en vogue", I think it's more a statement of the globalization of all cuisines. We're all exposed to more types of food though television and the US continuing to being a big melting pot of cultures.
My grandfather had the first Chinese restaurant in Atlanta in the 50's. What he was serving was not authentic Chinese cuisine. Did everyone know that then or does everyone think that Chicken Chop Suey is a 100% authentic Chinese dish?
I think it's great that we are all willing to try different cuisines. It is a sharing of cultures as we all "break bread" together.
I agree George. The world is becomming a smaller place today. I will say I thought I could never even try sushi much less like it but once I tried it I fell in love!!
Welll..I think it makes people feel superior to say they like sushi. Like we're supposed to be impressed they eat raw fish. It's kind of like the people who eat their steak rare, and look down their noses on the well done steak eaters.
One thing that I do like about sushi is how beautiful it is to look at. I stick with the veggie ones, since I'm sort of afraid of picking up a parasite.

Sushi is trendy. Steak is not.
