I'm vegetarian and eat a lot of sushi.
Good rice and seaweed.
Fresh veggies.
Tedious to make, getting a good tight roll is an art.
I lived in Japan and ate a lot of sushi.
They have these wonderful sushi-go-rounds that circle the restaurant and you select what you like and pay by the color of the dish.
Sushi may have been a hipster thing 20+ years ago (back when I aspired to be one), but it's pretty mainstream now. Nothing quite like fatty tuna, sea urchin, and Spanish mackerel for a quick pick me up!
Because it is super duper yummy for one thing. I also find that eating sushi is also an experience not just about eating which is something us hipsters enjoy Sushi doesn't fill you up to much so you have plenty of energy to be doing hipster activities after eating which large icky meals do

That may cause great alarm to the hipsters. If it gets too mainstream, they'll have to go out and find another food to make them edgey and unique. It's like urban revitalization when hipsters (who grew up in suburbia) move in and then get unhappy that too many other suburbanites move in. Being a hipster is a 24/7 job these days.
Because hipsters, although they are mostly sheltered rich kids, like to act as though they are worldy and multi-cultural.
They would never eat American food, that ain't hip brahhh. It's gotta be foriegn and exotic.
Hipsters have become so lame these days.....
