I'm not really a brand snob, but I do prefer grinding my own beans to preground, preground just gets stale and flavorless so quickly once it's opened.
Of the bean coffee I buy, I find Eight O'Clock to have just as rich a flavor as many of the more "designer" brands. However, I don't buy much bean coffee, as my sister manages a Starbucks, and passes along her weekly allotment of complimentary beans to me quite often. Unfortunately, like many, I find Starbucks a bit dark on the roasting, but, hey, free coffee beans. I typically drink my coffee with half and half, which cuts down on the bitterness of their darker roasts.

If it's too strong, then blend it! More often than not, when i was using Starbucks regularly, i would usually blend it with 8 O'Clock Original. At the time, the 8 O'Clock was a fairly inexpensive bland coffee. It was perfect to use as a cheap filler bean to stretch out my supply of pricey and strong Starbucks.
I wish folks outside the few cities that really "get it" when it comes to espresso, could experience the ethereal taste of espresso done right. If you can't get to Italy, go to Seattle and head straight for Cafe Vivace. Order a latte...

...and stay as far away from Peets as you can. Peets is awful!
If you actually like the flavor of coffee and don't smother it in flavored syrups, flavored dairy/non-dairy, sugar/sugar substitute, foam/whipped cream, cinnamon and chocolate shavings....Starbucks or Peets. If you chose all (or most) of the above, Dunkin Donuts, 7-11 or a supermarket brand.
We enjoy Seattles Best in our house and sold by the 12oz in WalMart and other stores. When we go to friends they brew Folgers.
