Tonight I made Matsutake Sukiyaki. It is a Japanese beef and noodle dish prepared with matsutake mushrooms. The mushrooms grow here in the Pacific northwest, and have a very special and addicting complex flavor.
It was really the most delicious thing I remember making in a long time, and I have made some very good food over the years.
There are two recipes I made that are now my go to, fool proof dishes that everyone loves. One is Ham Tetrazzini and one is Chicken Dijon. Both can be made ahead for when company is coming.

French (flourless) chocolate cake...dark, silky, and devastatingly rich. I took one to work for an office party several years ago, and they couldn't believe it didn't come from a pastry shop.
