Roast in the crockpot with potatoes and carrots - thickened with corn starch to make a nice gravy - also cornbread and fat lima beans.

I made a nice quick single-serving spaghetti sauce. While the spaghetti was cooking, I put a dash of olive oil (maybe a Tbs or two---butter would work, too) in a saucepan, and lightly sauteed a couple of cut up cloves of garlic. Then I chopped a half a poblano pepper and a half a roma tomato, and sauteed those in the garlicky oil. I poured that onto the spaghetti, and topped with grated parmesan. I thought of adding some chopped green olives, too, but didn't want to overdo it.

Default The Agenda - May 9 - 15

This week's selections for dinner have only two definites for my kitchen at this time, and that's hamburger steaks with brown gravy (mixed veggies on the side), and chicken Florentine with a possibility of some cheese toast. For dinner this evening, as it's Mother's Day, I'll be heading for Mac's Grill in Colleyville, TX for possibly some chicken-fried steak (at least, that's what I'm craving).

Happy Mothers Day! DH said tonight is probably going to be out to dinner for Mothers Day or if I prefer he will cook dinner for me here. What a guy!

I love basil too! I only have about 5 plants and will probably propagate a few more from those in a month or so. Yesterday I made a green herby dip/dressing. I used half mayo and half greek yogurt, 4 cloves of garlic, and a whole basket of herbs from the garden - mainly basil, parsley, and chives, with some dill thrown in as well. Put it all in the food processor and blitzed it into a lovely green "ranch" type dressing. I thin sliced some baby cucumbers and poured the dressing over. SOOO good.

Tonight will be chicken chili. I'll put it in the slow cooker about 1pm and about 10 pm will add the extra left-over blackened chicken with rice sitting in the fridge.

I understand that dinner is homemade crab cakes, baked sweet potatoes, and broccoli. Strawberry shortcake for dessert.
