no good southern style bbq in California. Last time I had good down home finger licking lip smacking foot stompin mouth watering bbq was when I was in Georgia in the mid 90's. I do declare I also miss those Georgia Peaches if you know what I mean!

As many sauces and bbq styles as bbq cooks!

Tabasco? Paprika?

Not trying to argue, but in that particular corner of the South, its almost compulsory for slaw to automatically come on the sandwich.
I'm from that area, and have eaten LOTS of BBQ there........we smoke our own, too, and it comes served with slaw!
I second that. Not just "touristy" places that put slaw on the sandwich either.

When I first moved to NC from NY I thought that was the nastiest thing ever. Untill I tasted it! I can't eat a BBQ sandwich without slaw. Now that I'm in FL, I miss a place called CookOut. I loved their BBQ sandwiches and hush puppies.

I think slaw on barbeque is the very essence of yin & yang in food. You have the soft but chewy hot pork in a spicy sauce, and on top of it you have the crunchy, sweet cold cole slaw.

This is the only slaw map I could find, though it relates to hot dogs and not barbecue. I was not aware of the "Slaw Mapping Project", but they are obviously doing important, vital research and hopefully will have a wider range of slaw-ography available.

Those are only in NC, I think. Their milkshakes are the bomb!

In Memphis I've never been to the Rendezvous, and I'm certainly no BBQ expert, but Corkys, Tops and Brads all serve slaw ON the sandwich. Nearly every BBQ place in the deep south I've ever been too serves slaw on the sandwich.
