Chicken and pesto pasta is awesome.

Add toasted walnuts and cherry tomatoes if you have them.

Cyn, this is a long time family favorite that we got from one of my favorite cookbooks - 365 Ways to Cook Pasta.

I always make my own pesto and then all you have to do is cook the pasta, add the diced or shredded chicken, halve some tear drop or cherry tomatoes, and toast some walnuts and crumble them over. I'm sure it would be good w/ prepared pesto, but not as good. I would just google pesto recipes if you want to make some. The one I use has walnuts, extra virgin olive oil, parmesan cheese, basil, and italian parsley. I do 3 parts basil to 1 part italian parsley because I really love basil.

Cyn, I always use bowties with pesto, the pesto really clings to all the nooks and crannies!
That reminds me, I gotta harvest basil over the weekend and freeze another batch of pesto.....I'm like a squirrel storing nuts for the winter, lol!

Simple and easy would be if you have a box of rice-a-roni, or wild rice, or yellow rice, etc..... Prepare and just add chicken. Could add a can of sweet peas depending on what flavor rice you had. (That chicken spaghetti sounds pretty good to me!)

Chicken salad?
Chicken sandwiches?
Chicken tacos?
