i don't have much experience in road trips, but i have to add confirmation to everyone that mentions I-70 through west colorado rockies, especially during snowy season, AMAZING!
i'm surprised no one mentioned the I-5, but maybe it sux more then i think.
I like the drive on the I-10 elevated freeway over the Atchafalaya Spillway. It's a great way for people passing through to experience wetlands without having to leave the comfort of their automobile.
In my driving experiences, the best highways were: I-10 in Florida and I-40/I-85 stretch in NC. The ride from Jacksonville to Talahassee(sp?) was serene with very little traffic. I didn't notice many cops either, could have been my imagination. Also I-40/I-85 between Greensboro,NC and the Raleigh-Durham area. The traffic flows and I got where I was going in little time. I have to say most of the interstates in the great Palmetto state suck. The highways are congested, the roads are not properly maintained and have not kept pace with the state's growth, and did I mention people here cannot drive? This is especially true on I-26 towards Chareston-the exception being the greater Columbia, SC area.
I'm partial to I-70 and I-68 between Hagerstown and Morgantown (though I haven't been on the West Virginia portion of I-68). The I-68 Maryland portion is particularly attractive.

I-40 from Barstow to Albuquerque
I-15 from San Diego to St. George, UT
I love desert landscapes and ocean landscapes. They offer an openess and tranquility. I really do not like highways that go trhough forests because it seems really closed in to me and it's just too much green for too long. There is just something about the desert that makes me go back for more.
