I have spent the last couple of hours making a chicken and sausage and pork cassoulet......I never did it before. I need to take something to a pot luck dinner at my Quaker Meeting tomorrow.....and I wanted to do something different. (I dont know the people real well......but I am afraid many could be vegetarians. Oh Well......I have had fun cooking.)

I even made a stock yesterday from chicken feet and necks.......very gelatinous stock. The meats are all browned and the beans are simmering for the next couple of hours.....I added the pork hocks to the pot with the beans and aromatics.

Then it gets all reassembled in a casserole dish and baked in the oven for 3 hours......(That will probably get done tomorrow in the early AM before I leave.

You continue to amaze me with your cooking skills elston--and energy!
Our church has changed the schedule for Dec. so this month church is at 10:15am. I woke up at 2:30am and just stayed in bed until 4:30am. I am tired now so maybe I will take a nap after church today.

The cassaulet is in the oven ..... reheating and browning. It smells delicious. I had to transfer it to the slow cooker liner....so I would have a way to keep it hot waiting for meeting to be over......the last thing I would want would to be responsible for food poisoning.........safely holding food for service can be tricky.

I had trouble sleeping in the wee hours this morning too, cyn. I woke up around 2AM also cyn.....and tried to stay in bed...managed to stay in bed until about 4:30.....and then got up....and started my day. I will be able to nap after I get home from meeting.

Just talked to my dear friend and she never has a problem sleeping but she was awake at 3am and couldn't get back to sleep. Maybe something in the atmosphere??

Woke up at the same time last night but was able to fall back to sleep until 4am thankfully. It rained all day yesterday but I did get to church and am glad I did--as usual. It always helps me to be more grateful. It's very confusing for me to know I am really in much better shape then so many others and yet I am so sad a lot of the time. I get mad at myself for being so ungrateful. But I have to remember we are human.

I loved my quaker meeting yesterday..........well attended.........and it was so good to sit in the silence with these good people......opening to the spirit.

The social....pot luck following the meeting was very pleasant........and every bit of my cassaulet was eaten......and that was a lot of food that filled my large slow cooker! It looked as if Jack Sprat and his wife had been invited guests.

Oh that is wonderful elston. So happy for you! It doesn feel good to see others enjoy foods you prepared! Your quaker meetings sound interesting! I'll have to do some research into it. I am always open to all kinds of beliefs!
