Here is one for you to ponder about. I'm lactose intolerant. It's so bad I once absentmindedly dipped my chicken wing in Mayo once and I had the runs the rest of the day. And yet I put evaporated milk (lots of it) into my morning coffee and I'm fine. I tried it once with regular milk once and I was bed-toilet bound for a day.

Evaporated milk has more lactose than fresh milk, because it is more concentrated, so I can't explain that.

And you know, there is no dairy in mayonnaise. It's egg, oil, a little vinegar, and salt. Maybe you are allergic/sensitive/intolerant to something you don't know about.

I don't know why you don't have trouble with evaporated milk, which does contain lactose. Maybe because you are only using a small amount?

Mayo is not is not a dairy product so it does not have lactose in it.

As stated, Mayo does not have dairy in it. You might be intolerant to something other than lactose.

As many have pointed out - mayo is not relevant to lactose intolerance.


But you might not be lactose intolerant at all. Some people are allergic too, or at least have a gastrointestinal reaction to, other milk components. If you have a response to certain milk proteins (or casein micelles) - you might find it a problem in normal milk but not evaporated milk since evaporated milk, while removing a lot of the water from milk, is also often heated in a different manner that partially denatures the proteins. In other words, the protein structure causing you the problem in regular milk may not exist in the evaporated milk because its been denatured and has a different 3D structure. This is not a diagnosis btw - just an educated guess.



Recently its become apparent that a minority of lactose intolerance isn't lactose intolerance at all, but something else.

I think evaporated milk is just milk with the water removed. So it's basically the same stuff. You'd need some kind of lactose-free milk. Almond milk?

Cold milk into the stomach just curdles, and can wrap around food and make it indigestible (or hard to digest). Milk in coffee would be heated and transformed, prior to entering the body, and may act quite different.

You must be allergic to eggs and not milk (lactose). "Dairy" has different meanings to different people, I guess?

Oh crap, may be I am allergic to something that often accompanies milk and cheese but is not lactose. I have always assumed it was lactose.

Sorry, people, it wasn't mayo. It was ranch. Does ranch have lactose? Sorry, English isn't my first language.

Cheese makes me sick. But if I cook and melt the cheese, then I'm fine with it.

You may be right here, that I'm not lactose intolerant after all. I've been avoiding dairy stuff for years ever since I got sick. May be I am allergic to something that often accompanies lactose.
