We had essentially the same problem when we replaced the stove in a 1980 house. It is a drop-in that measures 29.5. They don't make that size these days. Well, GE does . . . almost $1100 for a basic black-and-white electric stove with self-cleaning. It also comes in white. That's it.

We bought it. It wasn't what we wanted, but it was what fit. My son had the same problem when he replaced his. It was evidently a common size back in the day.

Anything "Built In" runs the risk when replacing down the road.

The simplest is free standing range and refrigerator.

My 1922 home predates refrigeration... so the refrigerator just sat there in the kitchen... the kitchen is otherwise all 1922 including the original High Leg stove...

At my current home... the cooktop was the problem... the cut out was for a 33" and 30 and 36 are standard... not enough room for a 36 and 30 would fall through!

So I paid almost double to special order the 33 inch which just dropped in.

I’m liking the idea of getting rid of that right hand vertical panel, so that there isn’t a width constraint for any bigger appliances.
I would recommend against a side by side. You are really going to lose space since you don’t have the width to store larger items. Ylisa has a lot of good options that have the French doors and the drawers that allow you to get the full width of the fridge. Also, not having the ice/water in the door will save a lot of space too. You lose a lot of door space when you have to allow for the water/ice in there.

That is what we did. We also cook a lot.
The 30-inch fridge is on the right. 24-inch ovens on the left.
