I've never been very fussy about sheets. 100% or very high content cotton is about all I look for and I tend to use flannel year round. I'd never want microfiber...my skin doesn't play nice with synthetic/microfiber clothing, why would I choose to sleep in it? Summers here don't get that warm, nights are predictably cool, and I don't heat my bedroom unless it's well below zero outdoors. The only issue with flannel is when I wear flannel too. Flannel against flannel tends to stick together a bit!

I want in the middle as far as quality - not the best nor the worst. I'm sure organic cotton is best, but I don't want to spend $50.00 for a sheet (twin). Plus I just need the fitted sheet, but apparently I have to buy a set?

Do you have a place like Tuesday Morning close by? I bought 600 thread count sheets there. So nice and so inexpensive.
I only buy 100% cotton sheets (though linen or bamboo might be nice). Plant fibers wick moisture away to keep you cool.
I live in Tucson, AZ, where highs have been over 105° for weeks, and lows are mid 80s.
I like 200-300 thread count sheets because they breathe.
We have some 600 count sheets we can only use in spring/fall, plus flannels for winter.
We bring cotton sheets when we travel; many AirBnBs use microfiber sheets. They may feel like cotton, but they sleep like polyester, hot and sweaty.

White sheets in the Spring and Summer, flannel sheets in the fall and winter.
We go middle of the road as well. When my husband's dad was dying and living with us, I got him some of the 600ct Egyptian just because...to me, they're near to the best in my price range.
I normally order my husband's sheets online and he needed one fitted sheet last weekend (for whatever reason I never noticed he only uses one set since his dad died). I just bought the fitted sheet at Walmart. The one I got was microfiber, about $16, and he's fine with it.
I normally order 300ct cotton for him. I order 300ct cooling/wicking sheets for myself.
What I consider "the worst" are 100ct cotton sheets. They feel scratchy and rough.
Sheets in 200ct are better, and actually decent if you are hot-natured and need to "breathe" at night. The higher the count, the tighter the weave, which is why they become smoother.
The Cotton vs Egyptian is the softness of the thread.
Percale vs Sateen is the type of weave.
Microfiber is a tight weave made of synthetics like nylon and/or polyester, and lasts longer than cotton, but stores heat.
