Many hotels by the Galleria if you want to cab into Uptown area. Stay downtown if you want to drink in Midtown or Washington avenue.

I'd probably go with a hotel in Downtown Houston so you can have access to the Metrorail and be able to go to bars and restaurants in Main Street Square as well as bars and restaurants in Midtown. Maybe Hotel Icon. I believe it's on Main Street. Might be pricey though. You may even try a hotel in Greenway Plaza and then taking a cab to Rice Village. I'd probably skip Uptown.

Stay in a hotel downtown, either near Market Square Park (several restaurants like Batanga, Hearsay, Line and Lariat, plus a ton of bars like Warren's Inn) or near the George R. Brown Convention Center (try MKT Bar).

What about the Hilton Americas or the Hyatt Regency?

Can't tell if they're near bars and restaurants.

You should have went with Hotel ZaZa, the rode the train into Midtown.

Great! Since you only have one night, here's a couple or recommendations for where you can go:

-Dinner at Batanga or Hearsay. Batanga has an amazing outside patio, while Hearsay is a lounge and has great food.
-Drinks at Warren's Inn. Bartenders pour heavy, the place is beautiful, and the regulars are friendly and sometimes rowdy (but it's Monday so it'll probably be more laid back). A good alternative would be Captain Foxheart's Bad News Bar, just around the block behind a secret door upstairs above Goro & Gun restaurant. They make really good cocktails and the second-floor patio view is quite nice.
-If you have time and want to listen to live music, head down to Sambuca.
