Meant to say thanks for the heads-up on Scottsboro Geno's. Even given the mediocre review, will probably try it on a convenient drive by. (Years ago, we lived in NE Huntsville, my wife worked nights and I frequented DJ's Pizza on Winchester Road. It was decent bar pizza in the middle of nowhere.)

There was a quick mention of Birmingham's Bellatolli (sp?) for Neopolitan pies in one of my foodie mags I read this week. I've not yet been there, but it has risen to the top of my pizza-to-have-in-Bham list just ahead of Slice.

My son described Scottsboro Geno's as Bar Pizza. He's more discriminating than I am though.

The idea is novel, the owners very nice, but the pizza only fair. The pizzas are $11. More sadly, with such a great tool as a wood fired oven, they are using sub-optimal ingredients. Their dough is fresh made but they use all purpose flour when they should be using 00 caputo or KA Sir Lancelot. (Plus, the dough is clearly unfermented.). The high temp of this oven is best used for these flours. Additionally, I was turned off by the Pizza Hut rabbit pellet sausage, and other nominal ingredients.

Pizza is worth trying, but I paid for it once and won't buy any until the ingredients change.

I think I'm just way too picky.....
The guy I know who has a similar set-up in Atlanta uses all locally sourced, fresh ingredients and the correct flour to get an optimal dough. You're right, the tools may be there, but the ingredients are really key to turning out a great pizza.

So let's stick to the local places or the new chains that come to town, not the old hats, Domino's, Papa John's, Pizza Hut, Lil Ceasar, Donato's, Papa Murphy's, etc.
